Pineapple Salsa


One of the first posts here was a Mango salsa that has since become legendary in the circles we roam. This, is a variant on the recipe with a few substitutions that give a similar yet different experience. The biggest change was the pineapple in place of the mango. I was tired of making the mango variety and needed a change. That and the mangoes at the store weren’t looking so hot. I also had a ton of habanero’s so I used these instead of jalapeno or serrano. I wanted a little agave flavor in here so I added the splash of Blanco tequila (from El Ultimo Agave!) and some agave nectar to help balance out the heat from the habanero’s. I think it came out quite nice and was killer tasty on the puerco pibil I made last night.

2 c Pineapple, chopped
1 small to medium red onion, diced
1 small red pepper, diced
2-3 Jalapeños, diced but keep the stems/seeds if you want some heat
1/2 cup of Cilantro, chopped
2-3 tbsp Lime juice
1 tsp agave nectar
Splash of Blanco tequila
Salt, pepper and Cumin to taste.

Put all that stuff in a bowl and if you can wait 2-3 hours, all those flavors will start to work their love out with each other and create something magical…seriously.

Next time we’ll roast the pineapple’s for some serious shining on
