Ceviche!!!

We’re planning a Tequila tasting with some friends in the next few weeks and I was interested in pairing meals with the different ages of Tequila’s. I knew I wanted something extremely fresh with lots of citrus in it to be paired with the blanco but didn’t want to just have some salsa’s. I had Ceviche at an Asian restaurant in L.A. that came to mind because of the freshness of all the ingredients, its heavy citrus flavors, and of course its uniqueness. Fish placed in lime and it cooks without heat, whats not to love?

I had given my wife a small book on tequila that had some recipes in the back, all of which were cooked with…get this, Tequila. One that immediately called to my attention was the Ceviche. Check out the recipe below, its extremely simple. Even people that cant cook should be able to figure this one out to impress their friends. I made some changes after the fact to add a bit more flavor…and heat.

Ingredients

1 lb. bay scallops
3/4c Lime juice preferably freshly squeezed
1/4c Blanco tequila
3 tbsp extra virgin olive oil
2 cloves of garlic minced
1/3c Cilantro chopped
2 Jalapeno’s seeded and sliced into very thin coins.
1/2 Red Bell Pepper seeded and sliced into strips
1/2 Yellow Bell Pepper seeded and sliced into strips
3/4lbs mixed colors Cherry Tomatoes
1/2c thinly sliced green onion
S+P
Lime Wedges for garnish

Directions

Grab dem scallops and trim off the little white abductor muscle, you dont want this, its chewy. In a small bowl, mix the lime juice and tequila then add the scallops and let sit for one hour.

Add the olive oil, garlic, chopped cilantro, jalapeno’s, bell peppers, tomatoes, and green onions to the scallop mixture. Season with salt and pepper then mix well. Its ready for serving. I served it in some martini glasses and it really shines it on. I’ve also seen them served on their own half shell.

Quick, easy, no cooking, just some chopping and impressive. How’s the taste? Amazing. Its so fresh and the little bits of pepper, cilantro, and garlic really work great together. The scallops themselves providing you get them fresh melt in your mouth. Its that good.
